Actually, according to www.warships1.com, there is very little difference in the number and kind of airplanes and helocopters on US carriers. The Forrestal, John F. Kennedy, Kitty Hawk, and Nimitz classes all have the same 80 or so aircraft onboard:

Helicopters:
8-SH-3G/H Sea King or SH-60F Seahawk

Fixed Wing:
1 Squadron F-14 A/B/D Tomcats
3 Squadron F/A-18C/E/F Hornets
4 EA-6B Prowlers
4 E-2-C Hawkeyes
6 S-3-A/B Vikings

The Enterprise class is listed in the same way except with the addition of 2 E-3B Shadows to the Fixed Wing list. However, I think the db excludes designs for Shawdow, Prowler, Hawkeye, and Viking aircraft. This leaves us with empty slots to be filled with Tomcats, Hornets, Sea Kings, and Seahawks.

All and all, I don't have much disagreement with the way carrier aircraft are modeled in the db as it is. I would add a few more planes to each ship, especially the Kitty Hawk which can carry 20 more aircraft than the 60 currently assigned, but that's about it.
